Green is the mood

Lately my workout has been quietly crawling into the pending to-dos list, but to make up for that I am trying my best to eat well. Salads have become my go to meal for the evenings. And seriously making a delicious bowl of salad isn’t a hard task. Just some good ingredients, little bit of imagination and you can toss a great concoction. In my latest experiments I tried some assorted lettuce with strawberries as the main note and it turned out really well.

Ingredients/Recipe
(Serves 2)

– 6 leaves of iceberg lettuce
– 6 leaves of Romaine lettuce
– 3-4 strawberries diced
– 1 small zucchini diced
– half apple diced
– 3/4 yellow bell pepper diced
– 2 walnuts (small pieces)

For Seasoning
– fresh cracked pepper, to taste
– dried Italian herbs (thyme, rosemary, oregano)
– 1/4 cup orange juice
– flax seeds or chia seeds
– extra virgin olive oil or flax seed oil

In a large bowl add all the ingredients and gently toss. Finish off with a drizzle of olive oil, and some fresh cracked pepper. And there, you have a wonderful salad.
