Salad Prepping & Shopping

I’ve been dying to get these Miu Miu sunglasses and finally {accidentally} found them in India. I am such a happy girl today!!

While at a recent trip to Jaipur, I had this amazing vegetarian Carrot Cake at Anokhi Cafe. Amazing place, a must visit for those cotton clothes shopping and having great veg desserts and salads.

Weddings, shopping, travelling and loads of work, and among all of this I’ve been experimenting with a lot of vegan and vegetarian salads – leafy, bean, fruit+veggies+avacado and cucumber – the list is endless. And here’s my latest one – Peach & Bean Salad.

I am a huge salad buff, and I ensure that everyone around me eats a good portion of it (even if I have to gulp it down their throats forcefully). I may sound a bit self-conceited here, but trust me this one turned out really well. Even those who are allergic to salad {now allergic I don’t mean in the medical sense here}, loved a bite of it. Since I’ve been asked a recipe for it a lot many times, I thought I’d post it on the blog….

INGREDIENTS

2 peaches – cubed
100 grams French beans – boiled a little to make it soft
1/2 Zucchini – cubed a slightly sauteed in olive oil for 30 seconds
1/2 small bowl pomegranate seeds
5 flaked almonds
1 tea spoon flax seeds

For Dressing:
1/2 cup orange juice
1/2 lemon’s juice
Salt to taste

Put all the ingredients in a large salad bowl, including the dressing, toss the ingredients. Serve it fresh. It serves 3 people.

I know I know its a salad, but trust me its insanely yummy for a salad, and healthy of course.

I’ve just realised, there’s been a lot of food posts lately, making it more of a fooddestino.com rather than styledestino.com. In my defense, I remember these words of Virginia Woolf “One cannot think well, love well, sleep well, if one has not dined well”… besides whoever said food can’t be stylish?
